This is my favorite cookie and it’s super easy to eat 🙂 I load it with lots of chocolate chips and nature’s candy, the wrinkly cousin of the grape who’s spent too much time in the sun, the raisin! Oatmeal gives the cookie a good texture and consistency, where otherwise, a plain chocolate chip cookie would leave you wanting more of a bite. The cookie is also very moist and chewy. The bittersweet chocolate chips only compliment the raisins and add a certain pop in your mouth when you bite into them. I hope you enjoy. Chocolate Chip Raisin Oatmeal Cookie Recipe
1 ¼ cups of flour
3 cups of quick oats
1 cup of softened unsalted butter
1/2 cup white sugar
1 cup light brown sugar
½ teaspoon baking soda
1 teaspoon salt
1 teaspoon pure vanilla extract
1 teaspoon ground cinnamon
1 overflowing cup of raisins
1 overflowing cup of semi-sweet chocolate chips
- Preheat oven at 375 degrees F. Grease cookie sheets and put aside.
- Cream softened butter, eggs, vanilla, white and brown sugar together until mixture is light and fluffy. Next, mix in the flour, cinnamon, salt and baking soda into the wet ingredients. Stir in the oats, raisins and chocolate chips. Mix well.
- Drop fat spoonfuls of the mix onto the prepared cookie sheets and bake for about 8-9 minutes until just golden.
- Remove when done and cool on rack. Yields 3 dozen
